Ingredients
- Raspberry Syrup
- 30 ml (1 oz.) raspberry syrup
- Homemade or quality café raspberry syrup
Matcha
- 2 g Cafe grade Japanese matcha powder
- 60 ml (2 oz.) filtered water, heated to 75-80°C (167-176°F)
Latte
- 180 ml (6 oz.) barista-style coconut milk, chilled
- Ice (fill 16 oz. glass)
- Fresh raspberries, for garnish

- 16 oz. serving glass
- Matcha bowl (chawan)
- Bamboo whisk (chasen) or milk frother
- Fine mesh sieve
- Measuring cup
Instructions
Prepare the Matcha
- Sift the matcha into a clean bowl to remove any clumps. This small step makes a noticeable difference in achieving a smooth, lump-free drink.
- Pour the hot water over the matcha.
- Whisk briskly using a bamboo whisk in a quick zigzag motion until the matcha is completely smooth with a fine layer of foam across the surface, about 20–30 seconds.
Build the Drink
- Pour 30 ml (1 oz.) raspberry syrup into the bottom of a chilled 16 oz. serving glass.
- Fill the glass about three-quarters full with ice cubes.
- Slowly pour the chilled coconut milk over the ice, leaving approximately 2 cm (¾ inch) of space at the top.
Finish
- Pour the prepared matcha over the back of a spoon or directly onto the ice. Pouring slowly helps create the signature green layered effect floating above the coconut milk.
- Garnish with a fresh raspberry.
